You can make it a meat dish that's dished over the top..

Built up really high with lots of fancy garnishes, using molds and make it bold.

The attitude is "Hey, I'm prime FILET MIGNON up front and center.. look at me how beautiful I am. I know you want me, but look at me first. My side dish entourage is propping me up."

Truffles (the fungus, not the chocolate).
Really expensive and exotic wine, cheese, or chocolate.
Foie gras.

Also, as other people have said, caviar and escargot.

You could make a really prideful appetizer: Fancy-looking crackers or mini-toasts served with a selection of caviars, cheeses, and foie gras.

Or a dessert: A fancy dessert wine with exotic chocolate.

I think the most arrogant food in the world is tiger p_nis soup. Killing a tiger just to cut off it's junk is the sickest thing I've ever heard. Of course, you'd have to go to Japan to get some. If you can't get there, I'd go with caviar. Fish eggs on a cracker. Yum.

Easy one, escargot hands down the most arrogant and prideful.

I was going to say escargot, but after someone mentioned foie gras, it reminded me that in order to make excellent foie gras, I understand they have to force-feed the birds. Cruel.

Caviar, champain, or a really expensive steak. Or all of them.
