ok so theres this guy at work and the first time he approached me he asked me if i wanted to come with him and some other coworkers to a lunch get together planned in a couple weeks. i told him id tell him the nex week. then the nex week came and he asked me again if i was going. then the nex week when i didnt go he said that he was hurt. then the next day he saw i was struggling to do something and he offered to help. later he starts to make random jokes to make me laugh. he has done this quite a few times. what does this mean? i dont have much experience and im clueless

It sounds like he wanted to include you in the lunch with the other coworkers. Then he was being a decent guy by helping you.
