Are you a US citizen? If you are, you can get the spouse a green card in under a year after you are married. He/she can ride the post education visa until then and even if it expires, i think the person can either file an extension or leave the country and come back in a few months after the green card is done. An immigration attorney can probably guide you along the steps.

Where is "this country"? For UK anyone who does not have indefinite leave to remain, or is not an EU citizen, needs to apply to the Home Office for permission to get married in the UK. This will normally be refused. You would be better off to get married abroad and apply for him/her to join you with a spouse visa, or for them just to return at the end of their studies and then apply for them to come on a fiance visa, getting married when they arrive in UK. You will need to show that you can support and accommodate your partner.
