I don't know how in depth your maintenance check is going to be, are looking to buy the truck, or just doing a check while filling the gas tank?
If you're buying the truck, you want to check oil pressure, have the engine put on a "scope" where a mechanic can check for differences in cylinder power and if it has a loose timing chain. He can also check the carburetor while on the scope by checking fuelair mixture.
If you are looking to buy, take it to a knowledgeable mechanic that you trust.

if you are doing a tune-up or just scheduled maintenance, your maintenance schedule in with your owners manual should tell you what to check at certain mileages. and if it dosent have that then i would go with what badbill1941 was saying and check all of the safety things.

The bigggest thing is the transmission. Dodge trucks have bad transmissions, so you might want to have them service that too.

Have your tune up condition checked, fluids, filters, brakes, suspension, etc. In other words, have all safety items checked.
