~~~~~~~~ Pork Chop with Barbecue Sauce ~~~~~~~~
“Barbecue” originated from the Mexican-Spanish word barbacoa, describing meat grilled over a green wood fire. Although primitive, barbecuing is one of the healthiest ways of cooking, for it allow any fat to drip from the food. It also seals in all the flavours of the food. The recipe uses a delicious homemade version of American barbecue sauce, which was probably adapted from the devilled sauces made with strong mustard that have been used in British cooking for centuries. This may be prepared a day in advance if refrigerated and then reheated in the oven or simmered gently. Serve with natural yoghurt, filled jacket potatoes and green salad.
4 spare rib chops
1 medium onion
1 tbsp virgin olive oil
3 tsp horseradish sauce
1 tsp mustard powder
1 tsp celery seeds
14oz / 400g can chopped tomatoes
2 tbsp honey
1 tbsp malt vinegar
1 tbsp Worcestershire sauce
Chopped parsley for garnish
Chop the onion roughly. Heat the oil in a saucepan and sauté the onion over a medium heat for 8 minutes until transparent. Add all the other sauce ingredients. Cover and simmer for 10 minutes.
Meanwhile, trim any rind and fat from the spare rib chops and place them in an ovenproof dish large enough to hold them in a single layer.
When ready, spoon the barbecue sauce over the chops, cover and bake in the preheated oven for 45 minutes until thoroughly cooked and tender. Garnish with parsley and serve. Serves4.

The easiest BBQ sauce can be prepared very quickly. You will need 2 cups of your favorite ketchup, 2 chopped onions, 1/4 cup of apple cider vinegar, 1 tablespoon of Worcestershire sauce, 1/4 cup of brown sugar, and chili powder to taste. Sautee the onions and then add the remainder of the ingredients. Cook on low heat for around 15 minutes until the mixture thickens. Then brush on your spare ribs.

I've made this before and it was really, really good. It's quick and easy to make. As a side note, this makes about as much as you would get in a store bought jar, so you will have to modify it for as much as you are making. I think it is a Bobby Flay recipe, but I can't remember exactly. Enjoy!
Cola Barbecue Sauce:
1 cup cola (recommended: Coca-Cola)
1 cup ketchup
1/4 cup Worcestershire sauce
1 teaspoon liquid smoke
3 tablespoon steak sauce (recommended: A-1 Steak Sauce)
1 teaspoon onion flakes
1 teaspoon garlic flakes
1/2 teaspoon freshly ground black pepper
Combine all the ingredients in a heavy non-reactive saucepan and gradually bring to a boil over medium heat. Reduce the heat slightly to obtain a gentle simmer. Simmer the sauce until reduced by 1/4, about 6 to 8 minutes. Use right away or transfer to a large jar, cool to room temperature, cover, and refrigerate. The sauce will keep for several months.

Spicy BBQ Sauce
4 c Tomato sauce
1 1/2 c Cola, Coca-Cola, Pepsi, RC
1 1/2 c Cider vinegar
1 1/2 c Chili sauce
1/4 c Prepared mustard
1/2 c Bottled steak sauce
2 ea Juice from 2 lemons
1/2 c Worcestershire sauce
2 tb Vegetable oil
1 tb Soy Sauce
3 ts Tobasco Sauce
1 1/4 c Dark brown sugar, packed
2 tb Black pepper, fresh ground
2 tb Garlic salt
1 tb Dry mustard
In a large saucepan, combine the tomato sauce, cola, vinegar, chili sauce, mustard, steak sauce, lemon juice, Worcestershire sauce, oil, soy sauce, and Tabasco. Stir well. Bring to a simmer over medium heat. In a small bowl or glass jar with a lid, combine the brown sugar, pepper, garlic salt, and dry mustard. Stir or shake to blend. Add the dry ingredients to the tomato mixture and stir well. Increase the heat to medium-high and bring to a brisk simmer, stirring frequently. Cook for about 20 minutes or longer for thicker, more intensely flavored sauce. Cover the saucepan and reduce the heat to low. Cook for about 30 minutes until the flavors are well blended.
Easy BBQ Sauce
1 Onion, finely chopped
2 tb Fat or cooking oil
2 tb Vinegar
2 tb Brown sugar
4 tb Lemon juice
1 c Catsup
3 tb Worcestershire sauce
1/2 c Water
1/2 ts Tabasco sauce
Brown onion in the oil and add remaining ingredients. Simmer for 30 minutes. Transfer to a blender and throughly blend, making a smooth sauce, ready for beef, chicken, or pork.

Ingredients:

1 c. water
1 c. ketchup
2 tbsp. vinegar
1 tsp. salt (optional)
1/4 tsp. pepper
1/4 c. onion, finely chopped

BBQ BELLY PORK RIBS IN ITS OWN
MARINADE SAUCE
4 lbs. of thick and meaty pork belly ribs
bbq sauce (smoked variety)
red wine
ketchup
Worcestershire sauce
honey
rosemary fresh leaves
oregano flakes
salt & pepper to taste
corn starch or flour
Procedure:
No specific ingredient quantities are needed for this recipe. You will adjust them to your liking. (The more, the better!) Four pounds meat feeds four hungry people!
Start by marinating the ribs, putting them fairly packed into a plastic bag or non-metal container. Sprinkle them with a lot of fresh Rosemary leaves (dried rosemary leaves may be used but the flavor will be not the same), oregano flakes and pepper (no salt at this time), then liberally coat them with the honey, BBQ sauce, ketchup and Worcestershire sauce.Turn the ribs and repeat the same operation, then add the red wine, being very careful not to wash out the coating of the ribs (you should pour the wine into the corners of the container).The wine should cover most of the ribs. Allow to marinate overnight in the refrigerator, carefully turning several times. Prepare the charcoal. You will need plenty of it because pork takes more time than beef, and the ribs should be cooked in the upper rack of the grill if possible. After the meat is seared on one side, turn it around and put the salt over this side, then repeat the salting process when the opposite side is also sealed.You will need to turn them quite a few times in order to cook the ribs without burning. I check the doneness of the ribs by cutting a piece in the thickest part of one rib and checking the color. I prefer them cooked when the internal flesh has a very light pink color without blood at all, but this is up to you.Some 5 minutes before the ribs are done, pour more honey over them, allowing it to melt.
SAUCE:
In the meanwhile, put all the marinade juice into a skillet (it can be sieved if you like) and add 2 or 3 teaspoons of cornstarch or flour to thicken the sauce.
Bring it to boil, then simmer for a few minutes. Check the thickness of this sauce and add the salt to your liking. If you like it thicker, add more cornstarch dissolved in any cold liquid (water, wine or etc) to avoid the forming of any lumps.
Note: To avoid an uncooked cornstarch taste, add cornstarch at least 10 minutes before cooking is finished.Serve the ribs with the sauce in a separate bowl.

Buzzsaw's BBQ Sauce
INGREDIENTS
1 teaspoon vegetable oil
1/2 onion, diced
1 clove garlic, minced
3 tablespoons Worcestershire sauce
3 tablespoons vinegar
2 tablespoons molasses
1 teaspoon prepared mustard
1 cup ketchup
1/2 cup cold water
1 teaspoon cornstarch
DIRECTIONS
Heat the oil in a saucepan over medium heat, and saute the onion until tender and golden brown. Stir in garlic. Mix in Worcestershire sauce, vinegar, molasses, and mustard. Cook and stir 5 minutes, then mix in ketchup, cold water, and cornstarch. Reduce heat to low, and continue cooking 10 minutes, until thickened.
