I do not have a double boiler and I want to melt the baking squares. How would I do that? Can it be done in a regular pot?

A double boiler is best. To make a simple double boiler just grab a standard pot with some water in it. Find a glass bowl that will fit nicely on top of that pot so a lot of steam doesn't come out once the water starts to boil. Place the choc. in the glass bowl and stir. I wouldn't microwave it, you could burn the choc.

You can melt them in a microwave. Just put in a glass measuring cup or bowl and mic. on very low. (Or at about 20-30% power.) Keep stopping and checking and stirring until it's melted. Keep a good eye on it! If you want to do it on top of the stove and don't have a double boiler you can do it with a bowl and a pot. Put water into the pot until it nearly reaches the bottom of a glass bowl that is on top of the pot. Bring the water to a boil, put the choc. in the bowl and stir until melted.

Do you have a glass bowl that could withstand the heat? You could "make" your own double boiler by filling your regular pot about half way and placing your glass bowl on top of that (don't let the bowl touch the water, but almost)and place your chocolate in the bowl. I wouldn't turn the heat up too much but a medium heat should get the water hot enough to warm the bowl to melt the chocolate. Its not fast but you have a better chance of not scorching/burning the chocolate.

GP's got it right. You can use a regular pot but need to do it on low heat and stir constantly. Microwaving will work, but it is microwaving.

If you do not have a double boiler, you may be able to make one. You would obvioulsy need a sauce pot and a metal mixing bowl that could nest in the sauce pot.

You can 'make' your own double boiler... either take a metal or heatproof ceramic mixing bowl that will fit on top, and sort of into a pot.. put in enough water into the pot so it doesn't touch the bottom of the bowl. Gently simmer the water and use the bowl for the chocolate.
Just be careful not to heat the water too much under the bowl and please wear oven mitts when removing the bowl... watch out for the steam!

I have even used a smaller pot that sort of fit into a larger pot... just had to be very careful that's all.

Yes, you can use a regular pot, just put it on low and stir constantly - it can burn easily. How about putting it in a microwave? The dbl boiler is you best bet. Just do it nice and slow.

I use the microwave. Do keep an eye on them and don't let them melt all the way. Pull them out when they are about 2/3 melted and stir them. The unmelted chocolate will finish melting while you are stirring.

I like to put the in the microwave on defrost. You have to keep a close eye on them, they tend to melt kind of fast.
