When I bought imitation crab meat, I actually read on the label that it's made from a fish called pollock.

Imitation crab meat is a process using fish, usually Alaskan pollack. The fish are deboned, rinsed, and mixed with seaonings or flavorings and sugar. Crab meat is also added for flavor. The amount varies with each processor.

crab meat is usually used to make the flavor of soup more fresh when having a luxury hot pot, it's quite expensive though

for reasons, cost down or vegetarian use, imitation crab meat is made of flour with seasoning instead of real one

Fake crab is white fish, but it's been processed do much, it's not so good for you anymore. Too many chemicals and sodium. You're better off eating the real stuff for a treat every once in a while.

It's made out of pressed rolled fish that's been dyed to look like crab. Here's a exerpt from a site I found:

"Imitation seafood (called surimi) is made from mild-flavored fish such as Alaskan pollock. The fish is skinned, boned and rinsed to tone down its taste, smell and pigment. It's then minced, colored and blended with flavor concentrate made from shellfish. Then it's cooked and cut into various shapes to look like shrimp, lobster chunks, crab legs and scallops. Interestingly, surimi (meaning "minced fish" in Japanese) was developed in Japan almost 1,000 years ago."

Most imitation crabmeat uses food dye in the US.
