Ganesha is a symbolisation of power and triumph. You can understand that by its size and that elephant head. The mouse is a symbolisation of the meek. The picture of Ganesha with mouse rolling around symbolises how you have to behave in your life. Ganesha is also known for his appetite. Yet he is allowing the mouse to eat his laddoos. With his power and might he could have whacked of the mouse with a small blow of his trunk. But he allows the meek, hungry little mouse to have his fill. This is a message for us. We should always care for the meek and the needy. Be humble towards the people disregarding their lower grades.
Look what the picture is trying to explain you. Cravers want to solve the mystery of the half smile of Mona Lisa. But they would learn a lot if they try to solve the mystery of such pictures.

The vehicle of Ganesha is a mouse. At a first glance it seems strange that the lord of wisdom has been granted a humble obsequious mouse quite incapable of lifting the bulging belly and massive head that he possesses. While drilling holes like a mouse he can also slip through the narrowest of spaces and thickest of the walls. Moreover, the mouse is deemed to be the master of inside everything. The all-pervading Atman (soul) is the mouse that lives in the hole called Intellect, within the heart of every being. It hides itself behind the inscrutable shape of illusion.

In my opinion it symbolises live and let live philosophy. Also, Ganesh is so sensible and magnanimous that a piece of laddu can not satisfy an elephant where as for a mouse it is more than enough.
