Lots of stuff does! If you're looking for deli-type meats, I'd say something with lots of flavor like honey ham or even roast beef would do you good. Pita bread is delicious, but can a little on the bland side. I love pickles (many don't) but if you do, add some! Also, try heating it up with melted cheese inside.
Here's my favorite though: Have you ever tried chicken ceaser salad inside pita bread? It's pretty much the BEST sandwich. I've gotten all my friends addicted to it. :) hope this helps!

I use chicken breasts which I habe sliced down the middle so that you end up with two thin chicken breasts. Season these with chagril chicken season or bbq chicken seasoning then grill or fry in the non stick pan.

Grill your pitta bread and then spread mayo on the inside and stuff with chicken. Serve with salad - yum!

I also like grilled pitta bread sliced into strips then serve with a dip of your choice!

Pita is really versatile. Almost anything. From peanut butter to salmon pate. (It must have a strong enough taste (either use larger quantity or stronger tasting fillings) because of the slightly heavier quality of the pita to have an effect.) Nice if it has some veggies or chunky stuff in as well...
