3 large bananas, peeled, divided
1/2 cup (1 stick) butter, melted, divided
3/4 cup (packed) golden brown sugar, divided
1/4 cup water
1 teaspoon vanilla extract
Cut 2 bananas into 1/4-inch-thick rounds. Combine 1/4 cup melted butter, 1/2 cup sugar, and 1/4 cup water in heavy large skillet. Boil over medium-high heat until mixture thickens slightly, about 2 minutes. Stir in vanilla extract and sliced bananas. Remove syrup from heat.

Pecan and Banana Syrup
You can easily subsitute Strawberries, Blueberries or Raspberries (or all 3) for more taste sensations & Pecans are Optional if you prefer!
Ingredients:
1/4 pound (1 stick) plus 2 tablespoons unsalted butter, melted
1 cup pecan pieces (optional)
2 medium-sized ripe bananas, peeled and cut crosswise into 1/2 inch thick slices
2 cups pure maple syrup
Directions
1. Heat 2 tablespoons of the butter in a medium-sized sauté pan over medium heat.
2. Add the pecan pieces (optional) and cook, stirring, until golden, 2 to 3 minutes.
3. Add the banana slices and syrup and bring to a simmer.
4. Set aside and keep warm.
The banana syrup can pour right over pancakes & waffles or into other dishes, like vanilla ice cream, pain perdu, or even biscuits and corn bread.

Here you go...
"Chocolate-Banana Sauce"
1 cup heavy cream
8 ounces semisweet chocolate, chopped
1 tablespoon banana liqueur
1 teaspoon vanilla extract
In a small, heavy saucepan, bring the cream to a bare simmer over low
heat. Place the chocolate pieces in a medium bowl. Remove the cream from the heat and pour over the chocolate. Let mixture stand for 2 minutes, then whisk until the chocolate is melted. Add the vanilla extract and banana liqueur and continue whisking until the sauce is smooth and slightly thickened. Serve warm, or let cool to room temperature.
Yield: 1 1/2 cups

"Banana Pecan Topping"
INGREDIENTS:
1/4 cup butter
3 medium bananas peeled and sliced 1/4-inch thick
1/2 cup sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup pecan halves
PREPARATION:
Melt the butter in a large, heavy skillet pan. Cook the bananas in the hot butter, stirring, for about 2 minutes, or until bananas begin to soften. Add the sugar, cinnamon, and nutmeg. Cook until the sugar dissolves and begins to caramelize, about 2 to 3 minutes; add the vanilla.
Add pecan halves just before serving. Serve warm or at room temperature, on ice cream, gingerbread, bread pudding, or pound cake.
Makes about 1 1/2 cups.

This is a wonderful topping for pancakes:
"Torani Banana Jam"
Ingredients:
1 Tbsp. Torani Vanilla syrup
2 Tbsp. Torani Creme de Banana syrup
6 bananas
Juice of 2 limes
1 cup water
3 cups sugar
Instructions:
Cut the banana into 1/4 inch slices and toss with lime juice. Bring water and sugar to a boil, stirring to dissolve sugar. Add bananas and cook 20 to 25 minutes, or until mixture is thick. Remove from the heat and stir in the syrups.
*Notes: Delicious on pancakes, toast, or ice cream with hot fudge and nuts.

You can make a simple syrup using brown sugar and butter heated in a pan. Add bananas. Then, you get your banana syrup.

I use agave necter (health food store) and stewed bananas with dates and sometimes walnuts. Just gently heat the fruit in a little butter until soft. Sometimes I leave the fruit chunky, sometimes I wizz it in the blender Yum
