Slice mushrooms. Saute in butter/margarine till some liquid from mushrooms evaporates. Stir in enough flour to make a roux. Add a little white wine and stir over medium heat. Add heavy/whipping cream, stirring till smooth, to desired consistency. If it gets too thick, you can thin out with a little more white wine or water. Season with salt and pepper to taste. To change recipe, you can also add peas and/or serve over cooked noodles.

Use the recipe provided by Poonch, but use whole small mushrooms or quartered larger ones and add dry sherry and a pinch of thyme to taste.
