All of the above depending on the way it is cooked. I always say anywhere from raw (steak tartar) to burnt (Blackened edges on the grill with a pink center). I never (ever) order well done in a restaurant as you will get a dried out lump even if it is a five star place. Medium Rare to medium well is the best in a restaurant as if you order rare, they will bring you a bloody lump too.

If you want to freak them out say (to Temperature). Same as medium rare to medium well. Means pink center without blood running.

Medium Rare to Medium. Nothing more than medium. It depends on the cut of meat you have. I personally prefer my rib-eye steak cooked medium. No sauces. If it's a good aged steak, you need not add anything else to it.

It really depends on what cut of steak you are talking about.

For instance, cuts like flank or skirt steak get extremely tough when they are well done. Chuck steak on the other hand, has plenty of fat in it, and can remain moist.

Filet mignon (beef filet) is one steak that I would argue absolutely must be medium, or preferably less cooked. It has so little fat in it, that once you cook it all the way through, you will have ended up ruining it.

Personally, I tend towards the pink/red side on most cuts.... but it does depend on what I'm cooking/ordering
