I don't understand the circumstances under which someone who has died would not say the following: "OH, I am such an idiot! Everything the Mormon missionaries said was true!" And then the person would accept the "Gospel" and a temple baptism by proxy and anything else he or she can do to increase their exaltation. Can somebody draw me a picture?
By the way, this is a serious question, so I'd like serious responses. And the more documentation the better. It doesn't do either of us any good otherwise.

Because the person is still the same. When we die, we still have the same spirit, the same attitudes, the same "beliefs"...if a person would not accept the gospel here, it is most likely they will not after this life. From what I understand, or have somewhat heard, it is going to be harder for someone to accept the gospel and repent in the next life than it is here on earth...that is why NOW is the time to accept the gospel and live it. If we can't live it here and now, how could we expect to live it there?
This is from a lesson manual we teach from:
The Apostle Peter referred to the spirit world as a prison, which it is for some (see 1 Peter 3:18–20). In the spirit prison are the spirits of those who have not yet received the gospel of Jesus Christ. These spirits have agency and may be enticed by both good and evil. If they accept the gospel and the ordinances performed for them in the temples, they may prepare themselves to leave the spirit prison and dwell in paradise.
Also in the spirit prison are those who rejected the gospel after it was preached to them on earth or in the spirit prison. These spirits suffer in a condition known as hell. They have removed themselves from the mercy of Jesus Christ, who said, “Behold, I, God, have suffered these things for all, that they might not suffer if they would repent; but if they would not repent they must suffer even as I; which suffering caused myself, even God, the greatest of all, to tremble because of pain, and to bleed at every pore, and to suffer both body and spirit” (D&C 19:16–18). After suffering in full for their sins, they will be allowed to inherit the lowest degree of glory, which is the telestial kingdom.
The hell in the spirit world will not continue forever. Even the spirits who have committed the greatest sins will have suffered sufficiently by the end of the Millennium (see Acts 2:25–27). They will then be resurrected.
What Are Spirits Like?
Spirit beings have the same bodily form as mortals except that the spirit body is in perfect form (see Ether 3:16). Spirits carry with them from earth their attitudes of devotion or antagonism toward things of righteousness (see Alma 34:34). They have the same appetites and desires that they had when they lived on earth.All spirits are in adult form. They were adults before their mortal existence, and they are in adult form after death, even if they die as infants or children (see Joseph F. Smith, Gospel Doctrine, p. 455).

Most people would accept the Gospel after death, if they saw it was true. There will still be those who reject it. After all Satan lead away a third of the spirits who lived with and knew Heavenly Father. Some will use their agency to reject it because of hatred, fear, and/or stubbornness. Some will probably think it's a test. Some will argue and protest that God is wrong.
I know from personal experience of ordinances being accepted. I have no experience or feeling that they were ever rejected. When my wife was the proxy for my grandmother, she got an overwhelming feeling of distress. We later realized that we did not include my grandfather.

Since this is a serious question, I will give you a serious answer from the Book of Hebrews. It existed for centuries before the Book of Mormon and it agrees with the Bible on this point.
Hebrews 9:27 says that death comes and then the judgement. There is no second chance, no opportunity for someone to get baptised on your behalf and no opportunity to do better in another life.
