A traditional student is a young student who went from high school to college.

A non-traditional student is a student who worked after high school and maybe had a family. They are usually older than traditional students, have had more life experiences and are usually juggling college with many other responsibilities such as paying bills/rent, raising a family and holding a job.

Generally, "traditional" students are those who come to college straight out of high school. "Non-traditional" students are those who go back to school after time off (to have children, to work, etc.). It's nothing that should affect you or your education - it's just a way to distinguish between the two groups.
