I cook a ton of stuff in the slow cooker..in fact, I have a roast in right now. My family's favorite recipe is for Tortellini soup.
Tortellini soup
3 can low sodium chicken broth
1 can crushed tomatoes
1 small zucchini cut into chunks
3-4 carrots cut into chunks
1 small can corn, drained
1 small red onion, chopped
1 T dry Italian dressing mix
1/2 t. crushed red peppers
2 cloves garlic, minced
1 T Italian herbs (oregano, basil, etc)
1 package refrigerate tortellini
Place all ingredients, except tortellini, in slow cooker. Cook on low for 7 hours or high for 4 hours. Add tortellini, turn up to high and cook half hour to hour more.
I serve this with homemade bread. My husband, who does not like soup as a meal, loves this!

You can cook almost anything in a slow cooker. Just this past weekend I made Italian Wedding Soup, and Chicken Cacciatore. This weekend, I'm making 2 big pots of sauce to freeze.
I've made countless soups, stews, chilis, even BBQ Pulled Pork.
I don't have any exact recipes. Just throw everything - excluding pasta - into the pot, and turn it on. Stir it every once in a while, and let it cook. I've even thrown in frozen stuff, put the lid on, turned it on low, and 10 hours later, dinner's done!

I love cooking chili in the slow cooker! My recipe tends to change a little each time, based on what I have in-house. It usually turns out to include beans (red/kidney), tomato sauce, diced tomatoes, meat of choice, and some spices and/or a packet of chili seasoning (usually mild for my personal tastes).

You'll LOVE Hungarian Goulash!!!
Sorry I can't find the recipe at the moment, but it's pretty standard and you should be able to find it on a recipe website.
Very nice served on a layer of fluffy mashed potato!
