Amsterdam is a beautiful city, I lived there for a year and enjoyed everyday.
For a first visit, the must sees are definitely the the Rondvaart (Canal boat tours round the whole city), take two one in the day to see everything, and a romantic candlelight cruise round in the evening.
Perhaps Anne Frank's house may interest you? I went twice but she was never in.
There are several museums from the sublime to the ridiculous, The Rijksmuseum houses the Rembrandt's, other dutch masters, and a whole host of other goodies, takes ages to see it all.
The the Van Gogh museum speaks for itself, as do the Sex museum and Ajax FC Museum at the Amsterdam Arena.
A walk through the red light district is a must just as firstly it's free, which is always good as far as tourist attractions go, secondly there are some awesome pubs, or brown bars, on the fringe of it, and thirdly as it's quite bizarre watching the girls ply their trade in a voyeuristic way, and finally it possesses an odd if slightly seedy atmosphere whilst simultaneously being well policed and quite safe for a wander around day or night.

Places to be merry in the Leidseplein are numerous but worth a definite look are the world famous Bulldog Palace Cafe, where you can have a beer & sample the local herb whilst watching the street performers perform in the square, while the rolling stone cafe and the rock hard cafe have bands worth watching on the weekend evenings,. The Dutch love to sit around drinking and chatting til late so there's no shortage of places to party really.
Clubbing the two best places are Escape in the Rembrantsplein and Trance Buddha in the red light District.

My Favourite restaurant was Bojo's off the leidseplein, they specialise in Indonesian food and the sate was amazing. Trust me, i have lived in indonesia now for 5 years and their food still remains on my mind!
For ribs the steakhouse on the Rembrantsplein was also memorable too. My recommendations would be to get off the lediseplein away from the tourist restaurants away from the big prices and poor meals and into some of the more local restaurants, Westerstraat has several whose names elude me now, as does Herengracht and Prisengracht in the area of dam square.

Hope you have a fantastic time, i hope to return there soon myself, it's an awesome place.
