The quick way to visualize this is to compare isometric and perspective drawings of a cube. In the isometric drawing, all the edges of the cube would be parallel in sets of four. In the perspective drawing, the edges would taper towards one or more vanishing points.
The isometric drawing, being easier to construct, perserving all scales and dimensions, is the preferred method for mechanical drawings, and are practical for use in the shop. The perspective drawing, which are trickier to draw properly, and does not preserve scales and dimensions, is the preferred method for architectural drawings, because they illustrate what the eye actually sees.

Let me simplify. An isometric is a mechanical view at a 45 degree angle. Perspective drawings are made so that the drawing looks like real life with distance and depth. In other words from the eye's perspective.

In isometric drawing the depth of the object affects only its position, while in perspective it also affects it's size and if the object is close enough it's distortion.

In Isometric drawing, the rays from all points of the object of the drawing are parallel. So it appears iso (same), metric(measurement) in all dimensions of veiw.
In perspective drawing, the rays from all points of the object converge to a point of veiw. So the dimensions vary according to the point of veiw.
