The best excuse is none at all - go in and ask her for her number. If you are shy, call the store and ask for her. Then you can avoid face-to-face rejection if there is any rejection at all.
But really, just go in and seek her out. Ask another salesperson if you could talk to the lovely lady who helped you yesterday, and tell her that you have a question for her. Then ask what time she gets off work (or goes to lunch) and if you could buy her a cup of coffee or a bite to eat then.

A good reason to stop by is that you like the woman and want to ask her on a date. Just go in and say "hi I know this may not be the time or the place but I've been thinking about you, can I take you out to dinner". Be confident and if she is single and has any interest in you at all she'll more than likely say yes

You could use the excuse of you are stopping in to ask her on a date. Just ask if you could call her some time if she says yes wait a day or two and call and ask her out. Ask for her number on tuesday so you can ask her by wednesday to do something on Friday or Saturday.

if you pretend that you are going to buy something it will be obvious and she might take you for a stalker instead..so just don't do it.
you will come across as confident and like you're your own man i
... just say.. you just walked past the shop saw her and thought she was beautiful, and if she wants to go out some time for coffee or something like that.
But make sure she doesn't have a ring on her finger first- it would be embarrassing for all

Whats so wrong with going there to ask her for a date, can't possibly be as pathetic as coming up with some kinda hairbrained sit-com-esque strategy for being in the store.
Best advice, if you're still using cover, don't use "I'm looking for something for my fiance" its never worked for me.

Ask her out to lunch.
It doesn't have the pressures of a Date.
Then you can get to know her better, and
ask her out on a real date at the end of lunch
if you want to.
With lunch, no pressure of a goodbye kiss.

Just pretend to buy a bunch of bogus stuff that is really out of character and then explain to her why you really came by, simply say lets do coffee you have me intrigued? It'll work if she has any personality or availability
