Does anyone know an easy way to make the icebox cake with the chocolate wafers? I tried it and botched it because it's a drag trying to form it into the log like the recipe on the wafer package says.

Hi !!!
Here is a fun one to make and, of course, it tastes great...ENJOY!!!!!

Allysa Torey's Wafer Icebox Cake

Makes 12 servings

INGREDIENTS
3 cups heavy cream
3 Tablespoons sugar (this is really to taste...I put more in)
1 Tablespoon vanilla extract
2 (9-ounce) packages chocolate wafer cookies
Unsweetened cocoa powder

In a large bowl, beat cream, sugar and vanilla with an electric mixer on high speed until soft peaks form.

On a flat serving plate, arrange 7 cookies side by side in a circle, keeping 1 cookie in the center.

Spread with 1/2 cup whipped cream, making a 7-inch circle. Repeat with remaining cookies and cream, making 11 layers of cookies and ending with a layer of cream (there will be a few cookies left over). Cover with plastic wrap and refrigerate overnight.

To serve, dust top lightly with cocoa powder.

Graham crackers ok?

Old fashioned icebox cakes are making a comeback. Try making this easy no cook recipe with different flavors of pudding mix and frosting for a new taste sensation.
INGREDIENTS:
16 oz. pkg. graham crackers
2 (3.5 oz.) pkgs. instant vanilla pudding mix
3 cups whole milk
8 oz. container frozen whipped topping, thawed
16 oz. container chocolate frosting
PREPARATION:
Blend the pudding mix, whipped topping, and milk in a medium sized bowl. Stir until well blended.
Place one single layer of graham crackers in the bottom of a 9x13" baking pan. Do not crumble, but leave the crackers whole.

I haven't had one in years but when I made it I usually have to place wax paper on the sides... yes the thing rolls around a bit but once you get it finished and eat it... it was well worth with... Are you making your whipped cream too soft? It needs to be firmer, also try to ice a few together in sections and then ready you place a knife or other object so it won't roll and then finish the rest, while removing the holding objects...

Hope this helps and boy, do I envy you!
