What does a guy really want a girl to tell when he asked "What have you been up to?"?

I have a friend who's been asking me what I have been up to every time he e-mails me. I have taken to telling him about my daily life. But what exactly does he want to know?

its just like saying 'whats up', or a 'hi' .so you don't have to actually go about replying him of your daily routine.just email him back saying 'hey going good' and mention only something interesting of your day. not your whole schedule. he's just making conversation ! keep it interesting. talk about a new song you just heard which you might wanna share with him or a movie you strongly recommend etc. ok.

But honestly, most guys are just dumb and like stupid questions like this too fill the time

Nothing. He wants the opportunity to tell you what he's been doing.
So just say "not much how bout you?" You'll see what I mean.
