Well, you're suppose to then dip it in bread crumbs or corn flakes or corn meal--- the egg is just to make a moist gummy outside so that the crumbs would stick to it.

You coat it in flour, then pass thru the egg, to attach it to breadcrumbs for a snitzel, it acts like a glue..
