I love to eat oatmeal for breakfast, but I'm getting tired of eating it the same way, and would like to try something new. I have heard of a recipe using apples in oatmeal, but I don't know how to make it. Any recipes?

This hearty breakfast dish is packed with cholesterol-lowering soluble fiber. Leaving the apple skin on contributes even more fiber. Most of the fat is a healthy monounsaturated fat from the nuts.

1 apple, preferably McIntosh, cored and coarsely chopped
1 cup rolled oats
1/4 teaspoon ground cinnamon
Pinch kosher salt
2 cups water
2 tablespoons pure maple syrup
1/4 cup toasted pecans

Combine the apple, oats, cinnamon, and salt in a large microwave-safe bowl water, and stir in the water. Cover and seal with plastic wrap or a tight fitting lid and heat in the microwave on high until apples are soft and most of the liquid is absorbed, about 8 minutes. Stir in the maple syrup. Divide between 2 bowls and top with the nuts. Serve immediately.

Apricot Honey Oatmeal

3-1/2 cups water
1/2 cup chopped dried apricots
1/3 cup honey
1/2 teaspoon ground cinnamon
2 cups Quaker® Oats (quick or old fashioned, uncooked)

In 3-quart saucepan, bring water, apricots, honey, and cinnamon to a boil.

Stir in oats; return to a boil.

Reduce heat to medium; cook about 1 minute for quick oats (or 5 minutes for old fashioned oats) or until most of liquid is absorbed, stirring occasionally.

Let stand until of desired consistency.

You are better to make it yourself than to use the crappy stuff in packets that have a bunch of additives. You can make some stewed apples with cinnamon and a little sugar on the stove and keep it in the fridge. Stir through in the morning just before you serve it. (Say, three green apples, peeled and diced, two table spoons of sugar and a 1/2 teaspoon of cinnamon. Heat pot with a teaspoon of butter and add apples, keep on low heat so they simmer and add the sugar when there is enough moisture to dissolve it. ) I love blueberries in mine. The frozen ones work just as well. Defrost them in the fridge overnight and stir through when before you serve. A sprinkle of cinnamon is nice with blueberries too.
