I know some guys that would say a nice bearded clam sauce would be great with some chicharrons

Mexican pork rinds are already heavy. You don't need a dip for them. A variety of hot sauces will work extremely well:

Buffalo Chipotle Hot Sauce (great flavor)
Tapatio Hot Sauce (very mild)
Dave's Ultimate Insanity Hot Sauce (VERY HOT!)
Red Rooster (heavy on the vinegar, it will cut the grease)

taqueria la panza has a sauce that goes great with chicarrons, and burritos as well.
