You can pack her lunches accordingly; try also some rice cakes w peanut butter, and yogurt with crunchies like grape-nuts to add protein.
Limit the apples to two or three small ones a day. Put up a food pyramid on the fridge and see if she will pick foods from each food group. Let her be involved in her food choices- she has already made some excellent starts. When at the grocery store, look at exotic fruits and try them out as treats. She may expand her repertoire once she knows she can.:)
