Chicken Caliente Casserole
Butter, for greasing casserole dish
2½ cups large-diced cooked chicken (I like rotisserie chicken)
3 cups cooked rice
1 cup sliced celery
1 cup sliced green bell pepper
1 cup sliced onion
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons freshly squeezed lemon juice
1 tablespoon chili powder
2 teaspoons fine salt
1/2 teaspoon garlic powder
1 teaspoon hot sauce
3 tomatoes, cut into wedges
1 1/2 cup corn chips, crushed
Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately.

This is my favorite food its a little spicy it contains chicken and rice and its easy to make!
INGREDIENTS
1 pound skinless, boneless chicken breast halves - cubed
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 (14.5 ounce) can chicken broth
1 (8 ounce) jar salsa
2 cups instant rice
8 ounces shredded Cheddar cheese
DIRECTIONS
In a large skillet over medium high heat brown the cubed chicken in oil, salt and pepper until cooked through and juices run clear. Add the broth and salsa and bring to a boil.
Once the liquids are boiling, turn off the heat and stir in the instant rice. Sprinkle all of the cheese on top. Cover and let sit for 5 minutes, then serve.

Easy Szechuan lemon chicken stir fry Ingredients: * 1 lb. Skinless, Boneless Chicken breasts, cut in cubes * Lemon-pepper bottled marinade (I use Lawry's) * Cooking oil * 1/2 to 1 lb. peeled and deveined medium shrimp * 1 package frozen Szechuan-style stir-fry mixed vegetables (I use Create-a-Meal with carrotsand snap peas, * A handful of small button mushroom, fresh or canned, drained * 1 small can sliced water chestnuts, drained Cooked Basmati rice Method Place the cut-up bite-size pieces of chicken in a glass dish or ziploc bag with lemon-pepper marinade to coat; marinate at least 1 hour. (The longer the better.) Add the chicken to a skillet or wok; stir-fry in a little oil just until no longer pink. Add the shrimp and saute' another 1-2 minutes. Remove. Add the frozen bag of Szechaun stir-fry mix and let simmer on low according to package directions. Add mushrooms, water chestnuts, chicken and shrimp. Cook 1 minute more to heat through. Serve over Basmati rice. Notes: Allow at least 1 hour for marinating time. The lemon-pepper flavor compliments the ingredients in this recipe. Jasmine rice makes a great substitute for the Basmati.

Chicken Mole & Rice.
Season chicken pieces with Garlic salt & pepper. Bake at 350 degrees F for 30 minutes or until fully cooked. Mix 1 part store bought Mole paste (Mexican food aisle) with 3 parts chicken broth & boil until thickened. Take meat off the bone and mix with Mole sauce, serve over steamed rice.

chicken fajitas
boneless skinless chicken breast cut up into strips
spices like,lemon pepper,garlic pwdr,and a little cayenne for heat
green and red bell pepper sliced
onions sliced
a little tomato sauce
marinade the chicken in the spices and salt/pepper.then heat up a pan and add the chicken.add the peppers and onions and cook until the chicken is browned.you can add a little tomato sauce however you like.serve with tortillas,salsa,guacamole,and some refried beans.
mexican rice
1 cup white uncooked rice
3 cups water
2-3 buillion cubes
2 tbls chopped onion
1/2 cup tomato sauce
brown the rice in oil and add the onion,not too browned,then add the water carefully and then the tomato,and the buillion cubes.add a sprig or two of cilantro and turn the heat to low and cooke covered for about twenty min or so

Get the Jambalaya Rice packages, chicken, chili peppers.
Cook the rice, saute the chicken and chili peppers with you favorite spicy seasonings then mix together and add some hot sauce or chili pepper powder if needed.
If you want you can also add some andouille sausage when you saute the chicken and peppers.

My favourite is ' honey chili chicken wings ' served with risotto.
You need, chicken wings, light soy sauce, sambol olek (minced chili), minced garlic and honey.
combine all ingredients together except chicken, mix well, then cover chicken with sauce and let sit about 1 hour ( in fridge ).
cook in oven approx 40 - 45mins on 200'. risotto is arborio rice and the directions are on the pack. good luck

deep fried your chickens. put aside
dry chillies, shallots, garlic blend
cook them with oil until it turns deep red and put the chickens in. dont forget salts and seasoning
eat with rice. theyre simply delicious. and its easy too
