Try Healthy Choice "Country Vegetable". It has no meat and is really good!! I eat Healthy Choice soups about every day at lunch and put about 5 crackers or so in it. You can also make a "veggie sandwich" with spinach, tomato, cucumber and onions. If you want, put it in pita bread - whole wheat is all the more healthier and is really good.

Hummus Wraps are easy.

Put about 1/2c of Hummus in a wrap. Put some spinach and chopped black olives on top of the hummus. Roll up the wrap and enjoy.

Might be even easier than pb&j

Fresh sliced tomatoes, with salt fresh cracked pepper, cheddar cheese, alfalfa sprouts on whole wheat & mayo is one of my favorite veggie lunches. Tofurkey sandwiches are always good. Frozen Gardenburgers, brushed with olive oil and heated in the toaster are always great.

Cuke sandwiches, salads, etc...

Fruit and pudding/jello cups.

If you don't want to spend the extra on the pudding/etc cups, buy a bunch of Gladware / Ziplock / etc containers and make your own.

For the sandwiches, buy some different types of bread - dill rye and Onion kaisers are good.
