Bacteria grows in the water jug and inside the Brita filter. If you leave the jug out of the fridge for long enough, lots of bacteria will grow inside it. The more bacteria you drink, the more likely you are to get sick.
Cold temperatures inside the refrigerator slow the growth of bacteria greatly but they still tell you to change the filter every couple of months.

I've left my Brita jug out of the fridge over night and nothing happened to me. The Brita filter only has charcoal inside it which won't decay or anything. I just wouldn't leave it out of the fridge for more than a day or two.

She sho uldn't have gotten sick off of this water... unless her filter was nasty or harboring bacteria or something.... I'd blame Taco Bell or other eating otu before blaming Brita.
