Does this mean that I've been in college for almost four years (Fall 04-January 2007 (currently attending college)? I ask this because me and my friend are arguing over this question...she says is only been two years: Fall 2004 to Fall 2005 = 1 year and Fall 2006 to 2007 = 2nd year. Who's right?

I meant I have been in school since Fall 2004....Fall 04 - Fall 05, Fall 05 - Fall 06 and Fall 06 - Winter 07 (Currently).

assuming you have been in every semester...
Fall 04, Fall 05 and now Fall 06, you have been in for 3 years.. and are now in your 6th semester??/

Fall 04 - Spring 05 = 1 year
Fall 05 - Spring 06 = 2 years
Fall 06 - Spring 07 = 3 years
When this semester is over, you'll have completed 3 years.

Your friend left out fall '05 to fall '06 unless you skipped that year. That would mean you would complete your fourth year in fall '07.

Academic Year Aug 2004 - 2005
Academic Year Aug 2005 - 2006
Academic Year Aug 2006 - now

You have completed 3 years and you are in your 4th year... by this time the two of you should know how to count.
