Sort and rinse the beans. (There may be dirt, foreign matter, or even stones in with the dry beans.) Put the beans in a pot large enough that you can add enough water to cover the beans, plus add three inches more water. (The beans will swell as they soak.) Soak the beans overnight, or for at least four hours. (You can do this faster, see below. I prefer to either soak them overnight, or I put the beans to soak before I leave for work.) Drain and rinse, then add fresh water to two inches above the bean level. Bring to a boil, then reduce the heat to a simmer and cook them until they're soft. Drain and discard all water except 1 cup. Use this if your chili thickens too much. Otherwise, you can now continue with the recipe you usually use, except. . . . Most canned kidneys have both salt and sugar added. You will definitely have to adjust the amount of salt in your recipe, but that can be done at any time after the beans are soft. (Both salt and anything acidic, like tomatoes or tomato paste, will keep your beans from getting soft when you cook them. Only add these after cooking the beans.) You may like to add a bit of brown (or even granulated) sugar to your recipe if you like your chili a bit sweeter than it gets when using the (cooked) dry beans.
For Faster Soaking:
The quick soak method: Sort and rinse the beans. (There may be dirt, foreign matter, or even stones in with the dry beans.) Put the beans in a pot large enough that you can add enough water to cover the beans, plus add three inches more water. (The beans will swell as they soak.) Boil beans in water for 3 minutes in a heavy pot. Cover and set aside for 2 hours. Drain and discard the water and rinse beans. Continue as above.
Or, the pressure cooker method: Sort and rinse the beans. (There may be dirt, foreign matter, or even stones in with the dry beans.) Bring to pressure and cook for 5 minutes. Remove from heat, and let pressure drop naturally. Drain and discard the water and rinse beans. Continue as above.

i assume the ones in the bag are dried beans , if so they should be soaked in water for 6 or 8 hours ( overnight) then they'll be perfect .
you might have to add slightly more water or sauce to the mix to make up for what didn't come in the can that you didn't buy
