I would like to move to Thailand and become a teacher, perhaps teaching English as a second language. I have no degree in the US. Do they check credentials? How can I get a visa to stay in the country?

Yes, you can teach in Thailand

My girlfriend is from the USA and teaches here in Bangkok. She wrote a guide to teaching English in Thailand

You don't need a degree, but it helps. Previous experience is more important I would imagine. The Thai authorites have certainly clamped down on checking credentials since the John Mark Karr case.
