I've been wondering this myself. There are ancient references to Israelites being blond or red-haired, e.g. Esau was covered in red hair. Egyptian paintings seem to show light skinned Hebrews along with dark skinned ones, sometimes with blue eyes and blond or red hair in addition to dark haired individuals.

My guess is that there was a pretty wide genetic variation in the early Hebrews, and it's only after milennia of intermarriage with dark Middle Easterners that we have the typical modern "Jewish" appearance.
