Hmmm, it's hard to pick just one. Probably Michael Whelan, who paints artwork for fantasy/scifi/horror books. I like his work because it is so realistic and the shapes, colors and compositions he uses are so beautiful, and yet almost all of his subjects are something unreal or creatures that don't exist in our world like dragons. He is so good with scenery and texture that you get a sense that that place is REAL. Even his personal artwork that is not for book covers always seems to tell a story.

If we are talking paintings here: Lowrys' simplicity and depiction of common class and daily life; Picasso's' vibrance, quirkiness and all -embracing of life, Van Gogh for his passion and self assurance in horribly difficult times.
Music, Beethoven, for overcoming overwhelming personal and social odds whilst creating some of the most beautiful music ever played

American watercolorist Charles Burchfield painted large, visionary paintings that blended in depictions of sounds and moods through a private language of symbols and motifs in a sometimes hallucinatory manner. Google Image Search his name.

I love Sisley. My favorite used to be Monet but then I realized I dislike his use of color. Sisley captures light and color much better, I think. I also really enjoy Jan van Goyen, a Dutch landscape artist. He uses a muted palette to evoke a very contemplative mood in his paintings.

I love Georgia O'Keeffe paintings because of the way she makes a flower look like more than a flower. She brings it's inner beauty out. Yeah you may think that's odd, but its truly beautiful.
