I'm not sure why older people do, but, i do know that there are benefits to drinking warm or hot water. Drinking cold water, especially after meals, solidifies the fats in your stomach, which has its obvious health risks. Hope this helps!

I am a server at a restaurant and I have asked a older gentleman the same question and he told me that his doctor told him to lay off tea and coffee cause it was not good for him and he likes warm drinks so he continued to get warm water with limes

Lot's of people drink hot water instead of cold...not just seniors. Here's why:
According to Chinese Medicine and Ayurvedic Medicine, hot water actually boosts digestive fire. It makes it easier for you to digest your food. Think of your stomach as a cooking pot and your small intestine as the gently burning kindling underneath. When you add a nice meal with good food combinations into the pot, it will cook nicely into a liquid that your body can easily transform into energy. If it doesn't cook well, you suffer the effects...upset stomach, diarrhea or constipation, bad breath, low energy, chronic fatigue, to name a few. So, if you dump cold water in your cooking pot, it means your body has to work a lot harder to get the food digested.
In fact, in Ayurveda, food and water and basically everything you experience can assigned values...vata (cold and dry), pitta (hot and wet/oily), and kapha (cold and wet/oily). We can see the effects of these values cumulatively in your health. Since cold water has the kapha qualities of cold and wet/oily, it will increase the qualities of cold and wet/oily in your system. A gross example would be weight gain. I'm simplifying the theory a lot and I'm not saying you're going to gain poundage just cuz you had a glass of ice-water! But, if you think about it, it sort of makes sense. With cold water, you aren't as efficient at digesting your food, and that could eventually be one of many factors in weight gain for a person prone to it.
There's my 2 cents. I hope it suits!

It can help keep you regular and any water, hot or cold is good for you as it flushes out the impurities in your body. My mother drank a glass of warm water with lemon juice every morning, saying it helped keep the system clean.

Drinking hot or warm water helps you sweat which reduces the amount of water in your blood stream, which will help prevent the elevation of your blood pressure.

Most of them are more sensitive to cold drinks (teeth/gums). Also drinking warm fluids help keep the bowels moving, constipation is common in the elderly.

I've never seen or heard of that before. Sounds strange. I don't see what the difference would be between hot or cold.

Clears your system out.. Think off your insides as pipes...every now and then we need to pour hot water down the pipes to de-clogg them.
