I am a busy college student and I think I eat way too little. I want to have a healthy diet. What are some must have snacks, foods, meal ideas I should have in my fridge?? PS: I am vegetarian! Thanks!!!

Soy milk, fresh veggies (easily popped in a backpack or bag and munched in a pinch), and lots of fresh veggies are a must. You can also make up some pasta in large batches and keep it in the fridge and heated with some sauteed veggies and a little marinara or alfredo sauce when you need more energy.

Vegetarian Refried beans, cheese, whole wheat tortillas. Always a high protein meal. Frozen veggies by Birdseye can be microwaved and are really good. Mix up some pasta, a little fat free half and half, a handful of parmesan, some frozen veggies, makes a great primevera. No sugar added fruits in cans are great. They are cheaper than fresh and sometimes better, depending on the season.

You need to cook ahead and freeze. Some of my favorite vegetarian dishes are Indian. Lentils cooked in garlic/onion with brown basmati rich keeps well for a good part of week in the refrigerator. Khatte chhole (curry chickpeas) is delicious and I have frozen these for later use. Phaol gobi (Calliflower with potatoes) can be frozen too but it looses its crunchiness.

I also like Chinese dishes. Get a good wok and stir fry spinach with tofu (very fast. Even faster if you pre-wash the spinach or buy bagged spinach). Buy some vegetarian "oyster sauce" and soysauce. Stir-frying or "chowing" in a very hot wok cooks many foods quickly. Kung Pao tofu in 10 minutes. Vegetables that also cook quickly are zucchini, asparagus, onions, bokchoy, napa cabbage. Any vegetable with high moisture content. (Cauliflower, broccoli, green beans, carrots take longer). Always have some cooked rice in the refrigerator or buy a rich cooker or both.

Cooking vegetables, it takes time to wash and cut. Since you are in college, pre-washed bagged vegatables can be expensive. It is best to wash the vegetables in the weekend, and DRY them for good storage. Wet vegetables rot quickly. So get a vegetable dryer.

Buy or make pre-made partially baked pizza dough. Heat oven, slather some sauce and cheeze, and voila, dinner. There is always PB&J.

Warning: many people think a vegetarian diet is low calorie. But vegetarians can gain lots of weight if they over indulge in carbohydrates (as in potatoes, bread, white rice, or pasta. Or sugarly foods and drinks.) Consume more high fiber, high protein food combinations. To get more iron, eat leafy greens. Spinach & tofu is a great combination. Lentils and basmati rice is another (basmati rice has the lowest "glycemic index" among the rice group).

Besides the usual fresh fruit and veggies for nutricious and quick snacks you should keep on hand canned black beans, tortillas (corn or flour), and salsa.
You can snack on chips and salsa and make a quick bean burrito with grilled onions, grated carrots and peppers. Maybe even break up a garden burger or tofu.

you can buy nutritional drinks that pack on weight. Boost is one of the drinks or you can purchase the store brand and they are just as good as I drink them. you can also buy lean cuisine and stoffers as they have good lines and are very healthy.
