Ingredients:
1 apple finely chopped
1 ½ cups dates, chopped
½ cup water
Juice of ½ lemon
½ cup vegetable fat or butter
¼ cup honey or maple syrup or malt extract or rice syrup
1 tsp. salt
2 ½ cup oats
1 cup whole wheat flour

Method:
Simmer apple, dates and water.
Mash well. Add lemon juice and set aside.

In a separate bowl, mix vegetable fat, honey and salt.
Add oats and flour. Mix well.

Pat 2/3 of the mixture into an 8 X 8 pan.
Spread the date mixture on top of the oat mixture.
Then sprinkle the other 1/3 of oat mixture on top of the dates.
Lightly press down.

Bake in preheated oven at 400º F. for 25 to 35 minutes.

This one doesn't have the same exact ingredients as above, but there's no sugar. I made them into more of a truffle ball type thing than cookies. They were really good!

Chop up the following in a food processor first:

1 square of bakers chocolate (can use carob if you're vegan)
Handful of raw almonds

Then add honey, and continue blending. Should be sort of a stiff paste consistency.

Then add a little bit of vanilla, and cinnamon to taste.

I don't think the cocoa is essential to the syrup; however, the sugar is, and you need to look at whether the coffee has a lot of sugar in it already. You may end up with a super-sweet cookie, and you may have to add a lot to get the flavor you are looking for. If you like the chocolate flavor and want to add the coffee as a flavor enhancement, you might want to slightly reduce the sugar to compensate for that. You can't reduce the sugar too much though without it affecting the structure of the syrup.
