why do grocery stores spray their fresh vegetables with water?

It keeps them fresh and crispy. Veggies are living entities and will stay in better shape if they are watered.

Ever noticed how a celery will become soft when left on a shelf in your fridge? Place it in water and it will regain its firmness.

The same goes with almost all veggies.
