I keep mine in a ziploc bag in the freezer. Keeps for MONTHS this way!

You can keep it fresh in the refrigerator or longer in the freezer, but the it is not really fresh anymore just preserved longer. Perhaps making use of it as it is fresh is better... put it into Italian vinegar & oil dressing will add flavor to it. Have a sushi party....

Freeze it and then when you need it you can take it straight from the freezer and grate off what you need.
