This is one of the first meals im doing completely alone, so these sides can be simple, but hey...im willing to give a tuffy a try haha

I'd suggest risotto as a good side. Its easy to make, they have boxes of them at the grocery store. And it will look elegant with your eggpant parmesan!

Put the eggplant parm on top of some spaghetti noddles and serve it with a nice salad and some warm rolls or breadsticks Definetly not lowfat fat but oh well. My family loves it.

A salad and a huge loaf of crusty bread. That's all you need! If you buy the bagged type salad it will be even less work for you.

how about garlic mashed potatoes? Use a potato ricer for lump free smashed taters......
