I have a lot of pork tenderloin left over from last night. I can't think of anything to do with it besides pork fried rice (yuck!) or BBQ. Does anyone have an idea of something really yummy that I can make with it?? Thanks! :)

Pork tenderloin can be cut up into bite sized chunks and added to sauteed potatoes for a sort of "hash". I take russet potatoes, leave the skins on, cut them into bite-sized pieces and sautee them in a bit of olive oil with fresh ground pepper and kosher salt. Sautee chopped yellow onion, chopped green pepper and fresh minced garlic with the potatoes. IAdd some rosemary and fresh thyme, cover and steam them until tender. During the cooking process you can add the meat and stir so that the flavors meld. After everything is tender, take the lid off and allow them to crisp slightly. Season to taste and enjoy with a salad of butter lettuce, mandarin oranges, roasted cashews, and a dijon vinegrette. Yum!

A couple of ideas come to mind. If you get a ziploc freezer bag, put a couple of pieces (enough for a couple of servings) and place some gravy in it. Freeze it (the bags won't take up any space). To serve, a month or two later, take out and defrost....heat and serve. This is good if you need to get dinner on the table and are pressed for time. You can also make a rice dish......saute onions, garlic & green pepper...cook some rice seperately. Chop up the pork....use capers or a tablespoon or two of chopped green olives...mix together and add a can of seasoned tomato sauce.......you can also throw in a can of beans such as kidney.....pigeon peas.....navy beans if you like. Season with salt & pepper to taste.

Pork Frehitas (not sure of SP). Get a package mix at market, add fresh peppers and onions. Roll in big flout tortia. We are having them tonight. Cummin is the main spice in the package.

Oh wait, my friend just said "tell her to put some chile and lime on it and serve it over rice and beans". Ok, there ya go

Thinly slice and make sandwiches, pork tacos, pork stir fry, slice and make a nice gravy w/ mashed potatoes.

green chili. dice the pork in small pieces. put in large skillet a little oil saute with a little onion & garlic. add diced tomatoes, more onion (green) cilantro & diced green chilies not in season so canned is okay if tomatoes are pricey in your area canned diced tomatoes is okay simmer for about 20minutes you can make burritos if you like if you like it hot use jalepenos & yellow (hueros) hots fresh if possible instead
