I do not need an exact calculation, but I need a good estimate for some guests with dietary limitations. Is there a site with an online calculator where I can enter the ingrediants (such as potatoes) and amounts to get an approximate nutritional information? Ideally with a general database so I don't have to enter everythign by hand since that would take forever.

The best place is actually the USDA Pyramid website. It gives you thousands of foods to choose from and provides a detailed breakdown of all nutrients including calories and breaks fat into saturated/unsaturated and mono and polyunsaturated counts, etc. I'm not sure what your guests dietary limitations are, but their nutritional info is quite comprehensive.
