You can add chunks of potato and fish them out later, or rice will work too (it is harder to get out, but will make your chili last longer)

In India and Thailand they traditionally use potatoes in their curries to help adjust the heat of the dish.

Potatoes also work to remove salt from dishes.

Besides the very versatile potato, dairy is a cooling agent, and so is sugar (both mentioned above) The reason is that they coat the tongue, mouth,and throat. This doesn't allow the capsiasin to spread, it actually adheres and flows down as it is being extinguished. Water and beer on the other hand send it careening all over the mouth and down the throat, hence the big burn.

A secret besides sugar that brings down the spiciness, as odd as it sounds, is chocolate... it gives the chili a really great deep coloring, too... plus if you wanted to add more tomato base to the chili that would also bring down the heat.

Dairy is the best way to cool down for any food that is too spicy. That is why traditional chili condiments are sour cream and cheese. Or have a glass of milk.

Sour Cream will do the trick. Load it up with some crackers, cheese and sour cream to dull it down. Still, it's hard to get chili too hot. It's chili, it's supposed to be spicy.

First try adding more of your main ingredients, like; tomato sauce, or beans, etc. Then try adding a Tbs or so of sugar. But there is NO tastier way than adding; rice, shredded Cheddar cheese, and the coolest way to cool down HOT chili... top with sour cream!!

Can't remove the spiciness now. No amount of diluting with anything will work. Toss and begin again or get out the fire extinguisher and the antacids!

Add more tomato based ingredients like tomato sauce or ketchup. This will only help a little bit. It's hard to remove once you have already added.
