Extra-virgin olive oils must have an acidity of less than 1 percent. Virgin olive oils, on the other hand, may have an acidity between 1 and 2 percent.

It is said extra virgin olive because it is the first pressing of the olives so the oil that is produce is extra pure so hence extra virgin olive oil while the other pressing that come after produce virgin olive oil

virgin olive oil is the oil produced by the first pressing of the olives, which is believed to give the highest quality oil and i think extra virgin is the refined best of that oil.

The acid content must be less than 1% and from the first pressing to be classified as virgin and is the best for salads and bread dipping. Regular oil may be a mixture of latter pressings and is better used for frying. The misleading categories are "pure" which only means it is oil from olives and the terms light and very lite which refers to color and taste, but not quality.

it has to do with the number of presses on the olives. Extra virgin in the first pressing, virgin is the second and so on. Extra virgin is lighter and less fruity than virgin.

Extra (or extra extra) virgin olive oil is good to use in dressings due to the flavor.
Regular olive oil is good for marinading or lubing your pan for sauteeing.
