We are currently without our kitchen and it's a challenge to come up with new and interesting, healthy dinners that my kids won't turn their noses up at (they're 6). When I get too creative, they end up eating cereal, which isn't awful, but, I'd like to do better, incorporating vegetables. Also, they don't like peanut butter. I do have a rice cooker, microwave, and toaster oven. Any suggestions?

Wonderful suggestions so far! I'm trying to stay away from the frozen foods, processed foods, etc. Don't get me wrong -- Stouffer's Mac and Cheese is the best! But ideally, I'd like the kids to eat better than I do!

healthy creative non-cooked kids dinner... that's tricky!!!!
you could make decorations with veggies on rice?
try cooking some rice and then put in a flat dish and you can make up decorations such as...
a face...ears of cucumber, two cherry-tomato eyes, beetrout chicks, a carrot nose, a sweetcorn smile, a head of spinachand mixed leaves... now eat the monster!!!
and everyday rice can be your blanc canvas!!! (also use brown rice for a change)
just paint with veggies!!! a boat, a landscape, a tropical fish... may you could involve the kids in a "best picture" competition and really take pictures to remember their artifacts!!!!

As for the kiddies, what about a veggie fried rice with peas and carrots mixed in? Or you can make a veggie soup.
"Grilled" cheese sandwiches with tomato and ham
toast the bread in the toaster oven, while that's going, pile up some ham with a slice of cheese on it, onto a plate, and pop that into the microwave for 30 sec. Then place this on the toast. I make Rubens like this all the time. Meat, cheese, kraut in the microwave, toast, and dressing. 5 min later I've got enough sandwiches made to feed everyone, and no huge mess.
Another good sandwich I used to eat at work is tuna or turkey with cheese on a bagel. Just put tuna salad and cheese on a bagel, and pop it into the microwave to make everything soft. Works well with turkey and cheese - no mayo needed.
There are also some great pre made frozen dinners out there. BJs has a stir fry that's pretty good. Just microwave it, add the sauce and serve over rice.

Cheesy mexican rice and beans, cook some yellow rice in your rice cooker, and then add a can of black beans, and couple handfuls of cheese and microwave it for 3-4 mins until cheese is melted and beans are hot. I add sour cream and taco sauce to mine. I am a college student with a kitchen similar to yours, and this is a great tasting wholesome meal. You can spoon it into taco shells, put on tortillas, eat like a dip and just make a big bowl of it.

Why does it frustrate you? Is it that big of a deal to let her sit at the table for an extra 20-30 minutes (even if it is by herself) to eat her food in peace? It's a mistake for parents to get so worked up because (1) it puts stress into the eating process and may lead to an unhealthy lifestyle in the future, (2) it places attention onto the child so they learn that they can control the conversation of adults simply by acting in a certain way, and (3) it needlessly hypes you up. If it's a serious issue, put less food on her plate. Less food equals less to play with. This is especially true if you start off with all of one food type (e.g. if you are serving peas, carrots, and fish, start off with just a scoop of peas. When she finishes that, allow her to eat a scoop of carrots. When that's done, give her a serving of fish).

toaster oven pizzas with english muffins, sauce, mozza, and pepperoni, tossed salads, breakfast for dinner is good too...scrambled eggs with toast,
beanie weenies- hot dogs and pork and beans..,fruit on cereal,
baked potatoe with all the fixins..,mac and cheese with salsa and sour cream,
taco salad, toasted cheese sandwiches and tomato soup..

Broccoli with melted cheese. Macaroni and cheese. Pasta with chicken. You can make your own pizza with English muffins. You can make rice with mixed veggies and cut up chicken breast.

you should have smoothies or have vegtable or fruits that like around the house but only award them with snacks unless they did something good
for dinner you should have healthy meals try have sandwichs or spagetti and meatballs or somethin from your local grocerie store that is heathly that you know that everyone in your house with like.

Tyson's chicken nuggets, or chicken strips (with ranch, as this is what my niece likes). you can also make chicken strip taco's. just minus the beef with chicken instead. add some veges to the side dish, or add them to the meal.
