My husband and I had a new recipe tonight and was really pleasantly surprise - it is at the link I have provided. It is called tofu & cashew chow mein. I couldn't find tofu, so I substituted it with pork, and I substituted the cashew nuts with peanuts. Otherwise we followed the recipe. The outcome was really delicious - well worth a try!
Also have a look around the website if you need ideas, there is a lot of delicious recipes on it.

I am broiling some salmon filets in olive oil and herbs, with wild rice and another veggie. Possibly a salad to start things off.

If you like pork chops, there is a good recipe for apple-glazed pork chops on this site. They sound really good. Makes me hungry thinking about it.
