Something that's pretty fool-proof, and always delicious, is cooking fish "en papillote" (in a paper pouch). All you need is parchment paper...they sell it in pretty much any supermarket, either in the Baking section, or alongside the plastic wrap and aluminum foil. You can probably find a package with just a few flat sheets (as opposed to a whole roll of it) for about a dollar. And aluminum foil will also work in place of parchment...it's just less tradtional.

Even though it calls for salmon, it can be done with any fish. And you can add or subtract whatever kind of vegetables/seasonings you like. The fish will ALWAYS turn out moist and perfect.

This has been a huge hit with my 2 daughters, ones 3 and the other is 1, my brother's g/f who hates fish and even my exwife who hates fish.
Make Zataran's French Market rice like you normally would except stop before the last five minutes.
Preheat your oven to 350.
Place rice in 9X13 cake pan.
Place Talapia on top and sprinkle with Garlic powder, onion powder and lemon pepper.
Place in oven for 30-35 minutes. ENJOY

try seasoning the fish w/ salt pepper garlic and onion powder then make a topping for the fish w/ Ritz crackers.
in a bowl add broken up crackers about 2 sleaves.
1/2 cup melted butter
and mix.
slowly add soup stock or water to get a moist consistency.
add parsley flakes garlic powder. and mix
top off each piece of fish and cook in the broiler until fish is done and stuffing on top is lightly browned.
you may also add chopped up crab meat or immitation crab meat to this topping.

All of those would be great with things as basic as lemon pepper. If you want classic baked fish lightly butter it and put a little salt and peper....really brings out the flavors of the fish. Google "baked fish recipe" and you're going to get thousands of hits.
