I use cream of mushroom soup condensed version. Add a dry onion soup mix pour over you raw pot roast and cook on low for 8 hours. I use the family size soup or two smaller. i also add some water to the onion soup mix. You can't go wrong and it will be yiummy gravy. If you add too much water just add some cornstarch at the last half hour of cooking the meat will fall apart.

Crock pot roast is awesome! And yes, you'll need some liquid - about 12 ounces for a 2 or 2.5 pound roast. Beer is best, though beef broth would also be good, and I've even used Dr Pepper successfully in the past. Definitely put the carrots and onions at the bottom of the pot, then the liquid, then the meat. If you add potatoes, put them in last - if you put them on the bottom, they'll absorb too much liquid and turn to mush. Carrots are tougher; they can take it. And season the meat before it goes in the pot. Even a packet of onion soup mix is good for that.

How To Make a Pot Roast in a Crock Pot
Difficulty: Easy
Time Required: 15 minutes
Here's How:
Heat a tablespoon of oil in a skillet over medium heat.
Season a 3 to 4 pound roast with salt and pepper then dust with flour. Choose a good chuck roast or bottom round.
Brown meat in the hot oil on all sides. Remove to a plate. Add 1/2 cup of water or beef broth to the skillet; stir to loosen browned bits. Remove from heat.
Halve and slice 2 large onions. Place in the bottom of a 3 1/2-quart (or larger) crockpot.

Cut 4 or 5 medium potatoes into 1-inch pieces; add to the onions.
Cut 2 or 3 carrots into 1/2-inch-thick rounds; add to vegetables in the crockpot.
Place browned roast on the vegetables.
Pour skillet juices over the roast and vegetables.
Season with a little more salt and pepper and add 1 bay leaf.
Cover and cook on the LOW setting for 9 to 11 hours, or on the HIGH setting for 4 1/2 to 5 1/2 hours.
Remove the roast and vegetables to a serving platter; keep warm until serving.
Tips:
You can use parsnips, turnip, rutabaga, or other root vegetables in this dish.
Replace half of the water or broth with red wine for more flavor.
For gravy, skim off the fat and transfer the juices to a saucepan; simmer until reduced to about 1 cup. Add a paste of 1 tablespoon of water mixed with 1 tablespoon of flour; continue cooking and stirring until thickened.

Here's how I make mine: mix 4 packages of brown gravy like it says on the directions, brown your roast, put into crock pot, let cook for 16-24 hours,add carrots, celery, onions, and potatoes, let cook for about2 hours longer, (until the veggies are soft). When you get done all you have to do is add 1-2 tsp of flour to the broth and boil on the stove for a couple of minutes and it's awesome!!!

Cola Pot Roast
(makes a sweet sauce that complements carrots, potatoes, and onions)
INGREDIENTS:
1 pot roast (chuck, bottom round,etc., about 3 to 4 pounds)
1 envelope dry onion soup mix
12 oz jar chili sauce
12 oz Pepsi or Coke
1 large onion, cut into large chunks
3 large potatoes quartered
3 large carrots, cut into large chunks
Mix all together, put in slow cooker. Cook 8 to 10 hours on low.

Put carrots, onions, celery, and some big cubed potatos in the bottom but pot roast on top (once its been browned), add a can of celery or mushroom soup and all done. You can also add some seasoning to taste like pepper, salt, garlic

and the longer you cook the more tender it will be (cook only on low)
