All of Europe was taken by The Romans and Scotland was never taken... Why? Were they that dam good that the Romans couldn't take the down or was it the Scots were that smart in defending their Country....

It is incorrect to say they 'never' took Scotland. They did move into the Lowlands as far as a line from present day Edinburgh to present day Glasgow. They built a wall called the Antonine Wall - of turf, rather than of stone like Hadrian's Wall further south (http://www.roman-britain.org/frontiers/antonine.htm)
They didn't stay very long, however. The reason they didn't stay was really neither of your suggestions, but just that it was logistically too far for them. They had difficulty holding down northern England which was a military area for the whole of the occupation - forts, walls and castles in plenty, but no villas like further south. There was nothing they wanted in Scotland and they were happy to stop at Hadrian's Wall for most of the occupation. It was a natural barrier for them. There were no 'Scots' at that time and the area wasn't regarded as on country. It was inhabited in part by the Picts.

Well.First of all because of the distance.
Let's think Romans were no good when it came to sailing. So it is to no surprise that they never tried to get islands and coasts from the sea.
After that it is the matter of time. I am no good at history but I think Romans' great empire was destroyed a long time before Scotland grown so important.
And at the end Romans had more to take before coming to Scotland.

Because the Romans were severely thinned out militarily and the Scottish lived in tribes and constantly raided the Roman borders. All they could do was build the big wall across northern england.

Either they were afraid of the lockness monster or the mold from all that green grass gave them severe sinus problems and had no antihistamines. Maybe???? I would have no idea but would love to know myself.

They did invade scotland they just didn't want what they found.
