try www.globalchefs.com - they have a career section, which lists vacancies. The website is run by a friend of mine who I met while he was working as a chef in Australia. He's since worked all over the world - good luck x

I worked in a restaurant in a hotel in Sydney and quite a few chefs got sponsored so they do seem to be in short supply. I would target big hotels and I dont think you will have any probs, especially if you are flexible about the area you go to.
