I've seem to have accumulated a lot of spaghetti noodles and frozen vegetables in my kitchen. Anyone have a good recipe that I can make with the 2? I know the easiest would be to just add spaghetti sauce, but I'm looking for something different. Maybe use a different kind of sauce or add some spices? The frozen vegetables I have are corn, green beans, sliced zucchini, sliced yellow squash, and lima beans. Any suggestions?

Something not only I but my family loves:

saute the zucchini and squash in some extra virgin olive oil
add the veggies to cooked noodles
add some olive oil
add some Garlic salt w/parsley

serve with lots of garlic bread

its easy and good for you

You need to use your imagination, there are many things you can make that are just as easy and cheap to make as those you mentioned. You can access a lot of menu ideas on line, but you first concern should be nutrition. Make sure you and your child are eating a healthy balanced diet and try and keep the the major food groups. Check your local paper for coupons and buy when things are on sale and use your freezer and stock up on meats when the deals come around. I noticed you didn't mention fish, that is a very good and inexpensive alternative when your looking for something different. I use to cook right from the cook book until I realized I could make the meals better, healthier and cheaper than they were so now I just make them up and they are great. I very seldom ever make the same dish twice although they were good the first time around, I just like variety and creating something new. For example, Monday I made turkey breast marinated in a hot chili salsa,Tuesday I made orange roughy with a vegetable rice medley, tonight I made eggplant Parmesan. They were all under $10.00 to make and they were very filling and plenty of leftovers.Good luck I hope that helped.

Make a creamy sauce, add the veggies and pour over noodles.

Saute the veg in butter, add some meat if you want, then after you put them on the noodles, sprinkle with parmesan cheese.

Make a thai stir fry with the veggies, add some oyster sauce, ginger, garlic and lime juice and serve over the noodles.

Make a curry with curry paste, stewed tomatoes and the veg, then serve over the noodles.

That's just off the top of my head. If I think of more I'll let you know.

You can make veggie soup and break up the spaghetti noodles into about 1 inch pieces and add toward the end of cooking

Stir fry the vegetables and serve over buttered noodles seasoned with your favorite herb.

sautee the veggies, toss the pasta with some good store-bought pesto sauce that you've added lemon juice and white wine to taste and add the veggies.

i like to take some heavy cream and butter and simmer until it thickens add some Parmesan cheese and salt and pepper then pour over veg and pasta .........yummy.
