I printed this recipe from Familyfun let me know how it turns out I've yet to use it but it sounds good...

1-1/2 tbsp. Butter
1-1/2 Cups light brown sugar
6 tbsp. water
Popsicle sticks
8-10 apples (McIntoshes are best)

Melt butter in a saucepan. Add brown sugar and water. Stir until it has a smooth consistency. Gently bring to a boil, cover and simmer for 3 minutes, until the pan's sides get steamy and the mixture is thin but somewhat sticky. Remove from heat. Pierce the center of each apple with the popsicle stick, then swirl in the caramel sauce till coated. Place on a greased cookie sheet to harden. Refrigerate for at least 1-2 hours before eating.

All caramel is, is melted sugar and water till it just barely starts to brown up, and heavy cream. Not the easiest thing in the world to make. It can burn in the blink of an eye.

You're better off buying the Carmel Apple kits in the produce section of your grocery store.
